At our house, the countdown has begun for the Super Bowl. The guys are all excited. They’ve been remembering their days playing high school football when I would call from the stands….”What inning are we in?”
I have no idea which teams are playing, but I will be watching….. the commercials. I have reserved my spot on the couch. I will be scrap booking during the game; and riveted to the screen during the commercials. I will never forget the commercial one year about “Cat Herding.”
The other part of the Superbowl that my family loves is the food. There are some recipes that I only make a couple times a year. I will be sharing a few of those with you this week. My sons gasp! “Mom! You’re sharing your recipes?!” I know, shocking isn’t it?
This Superbowl Soup recipe was given to me by a girlfriend. She got it from a PTA mom. It’s fast, delicious and the boys love it. This soup is happy to sit in the crock pot all afternoon during the game. You can make it mild or spicy hot depending on your family’s tastes.
If it is as cold there as it is here…..
that alone is reason enough to make this delicious soup.
Superbowl Soup
1 medium onion, chopped
2 pounds hamburger meat, or turkey
1 16oz can kidney beans
1 16 oz can chili beans
1 16 oz can red beans
1 4 oz can Ortega diced green chilies
1 10 oz can white corn
2 16 oz cans summer corn or yellow corn
3 cans Rotele Mexican tomatoes or 3 cans stewed tomatoes (12-16oz)
1 pkg Lawry’s taco seasoning mix (dry)
1 pkg Hidden Valley Ranch dry salad dressing mix
2-3 cans tomato sauce
Saute the onions in a small amount of olive oil. Transfer to a large soup pot or crock pot. Brown the ground beef or turkey; drain fat. Drain corn. Add all ingredients (except the tomato sauce) to the soup/crock pot. (I love these recipes where you just dump everything in a pot and let it go.)
Simmer over low to medium heat until heated through. Add tomato sauce to reach the desired consistency. You can add less corn.
If you like it hotter…whew…add tomatoes with jalapenos.
We always have shredded cheese and sour cream on the buffet table so people can help themselves. Other choices: chopped avocado, diced tomatoes, sliced peppers, (don’t rub your eyes) and chopped Bermuda onion. I also like to serve a slice of fresh baked corn bread to go with it, especially if someone gets a little carried away with the Anaheim chilies.
I don’t know if the Prize Patrol still surprises the Publisher’s Clearing House winner after the Big game….but guys…I’ll be home! Bring me a check and there will be plenty of Superbowl Soup for you!
